Fudgy Brownie Cookies

Did I have you at fudgy? Or perhaps brownie? Or was it the cookie part that reeled you in?

Seriously...melts in your mouth. Richest, fudgiest, chocolatiest (I'm just making up words now) cookies ever.

(note: these pictures were taken right after the cookies came out of the oven; once cooled they fully maintain their shape)

Last weekend some of Zach's family came to visit and I knew cookies were a must-have.  My sister-in-law Amanda, who also happens to be one of my lifelong friends, is a brownie lover so I knew these cookies would fire her up. Unfortunately the rest of us didn't leave many for Amanda...

Each cookie is extremely dense and filling; pop two of these bad boys with a glass of milk and you'll be the most content, satisfied human being on the planet. No joke. They're that good. Extra bonus? They're easy. Super easy. You don't even need a mixer! I'll never buy those silly "brownie bites" at the store ever again.

You'll need:
  • 1 package (18 To 21 Oz. Box) Fudge Brownie Mix
  • 1-¼ cup All-purpose Flour
  • ¼ cups Packed Brown Sugar
  • 2 whole Eggs
  • ½ cups Butter, Melted And Cooled
  • 2 Tablespoons Water, Or More As Needed
  • 1 cup Chocolate Chunks

  • Directions:
    1. Whisk together brownie mix, flour, and sugar.
2.Using a heavy spoon, stir in the eggs one at a time, followed by butter and 2 tablespoons water. If the batter appears like there is too much flour, add 1 more tablespoon of water. Batter will be very thick.
    3. Fold in chocolate chunks
    4. Cover and refrigerate for 2 hours.
    5. Preheat oven to 350 degrees.
    6. Grease a cookie sheet.
    7. Drop heaping tablespoons of dough on the cookie sheet. You want pretty thick cookies here to get the brownie feel, about 3 inches apart. Press down slightly. Don’t flatten completely. Bake for 8-10 minutes.
    8. Remove from oven, allow to cool 2 minutes on cookie sheet. Transfer to a cooling rack to cool completely.

    2 Months

    karate Bear...

a little photoshoot help from Daddy...

    Height: 24 1/4 in. (91st percentile)
    Weight: 13 lb. 7 oz. (87th percentile)
Head Circumference: 15.9 in. (60th percentile)

    Things to Remember:
-You had your two month immunizations Friday and did NOT like them. The nurse nicely let you breastfeed during the shots, but the second she jabbed you it was scream city :(. Mommy cried, too...maybe more than Bear. Less than five minutes later, though, you were a tough little guy. No more tears; you just slept it off.
-You are a regular little talker now. Anytime you're awake, you're coo'ing and smiling. It's the cutest!
-You have been in size 2 diapers for over a week now. Big boy!
-Thanks to last night, your record for sleep is now 9 1/2 hours. Straight. You went down at 10:30pm and woke up at 7:55 am. Yes, we realize how lucky we are.
-You love being held and walked around. If you get fussy while someone's sitting with you, the minute they stand up you're back to your happy self.
-You have completely outgrown newborn clothes (weeks ago) and are now in 3 months. Some of them are getting too small already and it makes Mommy sad :(.
-We gave you your first bottle (of breastmilk) on Friday and you took it really well. Mommy has started pumping and it will hopefully make life a little easier for all three of us. You just want your milk, any way you can get it!
-Stroller rides almost always put you to sleep. You love it.
-You discovered your hands last week and can't get enough of them; they are constantly up around your face and in your mouth. We don't blame you; we love kissing your sweet little paws, too.

We are so blessed to have such a happy, healthy Little Man. We've had our struggles (reflux/vomiting/nursing) but every single moment has been totally worth it; the fulfillment our boy brings us is beyond description. After Bear was born, we got a precious card from my great-aunt and uncle that now resides in Bear's baby book. The last line reads, "You have the bundle- now comes the joy". Little did we know just how much joy would come our way. We love you, baby Bear.

    Splish Splash

Our favorite part of the day is when bath time rolls around every evening.
Bear is definitely a water baby...
    But not always a get-out-of-the-water-baby...
checking himself out in the mirror :)
comfy, cozy, & ready for bed

What's your favorite part of the day?

    Grandparent Love

My parents came to visit us Bear this weekend and it was such a special couple of days. I love watching my Mom and Dad love on our Baby Boy! Pretty sure Bear loves it, too.

    Proof:

My Mom is the world's biggest reader; she's already getting little Bear started.

Somebody was pooped after all that fun!

    Post-Maternity Style: Mustard & Leopard

skinnies/chambray: Home Goods, flats: Yellow Box via Vickie's Gifts, rings/scarf: F21, earrings: Lauren Conrad for Kohl's (gift from Mom & Dad)

I never imagined, pre-Bear, just how much breastfeeding would affect my wardrobe choices. Button up/snap tops have become a common staple, paired with fun statement necklaces and scarves. Luckily it never gets too cold in Houston, allowing for light layers and semi-easy out & about nursing. I wore this outfit to dinner last night; we stopped at a few stores on the way and I was able to nurse in the car without a problem. Happy Bear=happy Momma!

p.s. I've mentioned this before, but I'm pretty obsessed with the LC line at Kohls. Have you checked out her jewelry? It's fab!

p.p.s. Looking into getting a whole new blog look (it's way overdue)...any suggestions or designers you've used? I'd like to keep it around $50-75, if possible. Thanks in advance! Cheers to a new, promising week!
