Peanut Butter Patty Stuffed Cookies

A couple posts ago, I talked about my brother's beautiful wedding last weekend in the Texas hill country (even more pictures here!). The weekend ended on a glorious note as we left with Girl Scout cookies from Scarlett's sweet niece, Anna.
Unsure of what to do with all these boxes of goodness (other than scarfing them on the drive home of course) my partner in crime, Brittney Granger, suggested baking them into a cookie. The whole ingenious cookie within a cookie concept. Thanks to Brittney, a star was born. We are absolutely in love with these big, gooey, peanut-buttery cookies. Worth every last calorie!

Ingredients:
  • 2 boxes Girl Scout Peanut Butter Patties
  • 1/2 cup shortening
  • 3/4 cup creamy peanut butter
  • 1/3 cup granulated sugar
  • 1/3 cup packed light brown sugar
  • 1 egg
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • granulated sugar
Directions:
Heat oven to 375°F.     
Beat shortening and peanut butter in large bowl until well blended. Add 1/3 cup granulated sugar and brown sugar; beat until fluffy. Add egg, milk and vanilla; beat well. Stir together flour, baking soda and salt in seperate bowl; gradually beat into peanut butter mixture.
Place flattened dough in palm of hand. Cover peanut butter patty completely with dough. Roll in granulated sugar; place on ungreased cookie sheet. 
Bake 8 to 10 minutes or until lightly browned. Remove from cookie sheet to wire rack. Cool completely.

  1. Oh. My. Goodness. There were miniature donkeys at Scarlett and Shane's wedding!? That's so lucky. And adorable. I wouldn't have been able to enjoy the wedding for wanting to love on them the whole time.

  3. Yummy, I just put Oreo's in cupcakes {the same phenomenon} - just makes everything taste better, right??? Love these! Just wish I had girl scout cookies left but they are all in my belly :) The hunt for more begins...!

  12. Whit--what's even more amazing is that the donkeys had baskets on each side that were attached to a saddle...the baskets were carrying shiner bock bottles! :)
